Faye has spent the last 6 years developing a passionate team that has seen Olive Tree Brasserie Lytham become a hot spot for local foodies and visiting holidaymakers. We caught up with Faye to talk about bringing authentic flavours and the sun-soaked warmth of the Aegean to the charming coastal town of Lytham.

The Story So Far

Faye’s journey with Olive Tree Brasserie began right at the beginning, when her family opened the very first restaurant in Lytham back in 2007. 

In 2020, Faye joined the team as General Manager, where she’s since evolved the venue to become a hot spot for both local foodies and seasonal visitors heading to the quaint seaside town. 

“I’ve built my career around my passion for hospitality and looking after people.”

Olive Tree Brasserie, Lytham has grown to become a staple in the local community, bringing a mix of authentic Mediterranean food and a relaxed, welcoming atmosphere that for many, is a home from home.

“What makes us stand out is that family feel… we want guests to feel like they’re coming somewhere they know, while still giving them an experience that feels special.”

“It’s the little things, remembering a regular’s favourite table or drink, noticing when someone needs something before they have to ask, and making people feel genuinely looked after. Those small touches can make a big difference.”

Our food is all about Greek gastronomy, inspired by the modern Mediterranean.

Our popular A La Carte menu includes Mediterranean classics such as Greek flatbreads, fresh houmous and Lamb Kleftico.

Firm favourites include padron peppers in maldon salt, spinach and feta arancini, and meatballs. Plus, our take on the classic kebab and gyros are a much loved mid week treat.

The Olive Tree Bottomless Brunch is the perfect opportunity to soak up the weekend vibes and is available every day from 11am until 4pm. Guests can enjoy 90 minutes of unlimited drinks, plus a delicious selection of meze plates. Even better, when the sun is shining, the outdoor terrace is the perfect spot to soak up a few rays.
