Kyle brings a wealth of hospitality experience to the table, having managed restaurants in the heart of Manchester’s dining scene, plus Greek tavernas overseas.

He joined Olive Tree Brasserie following the opening of our Stockton Heath venue and has since evolved our brasserie to become a small village sanctuary for lovers of Mediterranean food. 

The Story So Far

Olive Tree Brasserie, Stockton Heath opened in 2018, following a £600,000 investment to transform the former Lloyds Bank on London Road into our signature mediterranean hotspot.

The fourth of our award-winning brasseries to open, our Stockton Heath venue is perfectly situated on the main strip, and has become a regular favourite with local residents and the Warrington business circuit. 

Kyle brings a wealth of hospitality expertise to the table, having managed venues in Manchester and Greece. Which makes him the perfect person to take the reins on managing the day to day within our Greek-inspired eatery.

Stockton Heath is a leafy Cheshire village with a big-city appetite. It’s quietly built a reputation as one of the region’s standout destinations for foodies, casual drinkers, and late-night socialisers.

For a local restaurant, the competition is tough. Kyle works hard to ensure our customers keep coming back, with a personal approach to service and slick attention to detail. 

“London Road offers a huge variety of restaurants and dining options, with two other Greek restaurants already operating on the doorstep. This makes the market highly competitive, so attracting customers and creating a strong point of difference has been key to our success.”

It’s that personal touch and ‘extra mile’ mentality that Kyle instils in his team that really sets them apart. Whether it’s remembering a regular visitor’s preferences, or simply taking the time to get to know our guests, the small gestures make a big difference.

Food For Thought

Our food focuses on Greek gastronomy, inspired by modern Mediterranean flavours.

Our A La Carte menu features Mediterranean favourites such as Lamb Kleftico and Dolmades, plus Greek dishes such as Honey Pastourma, a Greek cured beef sausage.

The Olive Tree Bottomless Brunch is the perfect opportunity to soak up the weekend vibes and is available every day from 11am until 4pm. Guests love sitting back on the rooftop terrace to enjoy cocktails and catch ups over a delicious selection of meze plates. 

Firm favourites include padron peppers in maldon salt, spinach and feta arancini, and meatballs.

For Kyle, the Moussaka steals the show.

“I’m constantly building a strong rapport with customers while also developing positive and supportive working relationships within the team. I believe creating a welcoming environment for both customers and staff is key to a successful venue.”
